What is meal prep?


 

We’ve been cooking and serving Prairie Box for a little while now, and a lot of people have asked us: what exactly IS meal prep?

 

In a nutshell, meal prep is time. Time spent shopping and cooking every night is time NOT spent taking care of what’s most important to you. Whether it’s looking after the kids, getting that leg up on work, or just relaxing doing your favourite activity, meal prep helps you get ahead of the curve and accomplish whatever goals you set for yourself that week.

 

As a society, we are getting busier with less time to take care of ourselves. People know how important it is to eat healthy, preservative-free foods, however, often they don’t have the time or energy to make the healthy decisions they know they should be making. It’s so easy to stop at a fast food restaurant or grab a quick slice of pizza on the way home or between meetings. It adds up, and not just in dollars. Your body feels sluggish, and you don’t feel as sharp or as quick as you should.

 

Meal prep gives you the security of knowing that your meals are taken care of. You take control of your eating, and make sure that your body is fuelled with whole grains, vegetables and complete proteins. No more running down to the local fast food spot for something that you know isn’t good for you. It will also cost more than a freshly-prepared meal.

 

It is challenging in the beginning, that’s true. But if it was easy, everyone would do it! It takes a couple of hours each week to menu plan, shop and then cook, but you will feel much better for it. We’ve included our recipe for our famous Ancient Grain Salad at the end of this article if you’d like to give it a try.

Ancient Grain Salad

 

Ingredients:

1 cup cooked wild rice

1 cup cooked amber prairie quinoa

1 cup chickpeas, rinsed

1 cup cooked lentils

1/4 cup dried cranberries

1/4 cup dried apricots, finely chopped

1/4 cup golden raisins

1/4 cup brown raisins

1/4 cup dates, finely chopped

4 scallions, thinly sliced, green and white parts

1/4 large red onion, minced

1/4 cup pumpkin seeds, unsalted

Dressing:

1/2 cup olive oil

5 Tbsp apple cider vinegar

1 tsp sweet mustard

salt and pepper to taste

Mix all of the ingredients together, cover and refrigerate until you're ready to eat. Don't be afraid to add your favourite dried fruits and nuts as well.
